Whole Foods Plant Based Nutrition The Happy Vegan Couple ~ Denise Rose & Georgie Campas INTRODUCTION TO WHOLE FOOD, PLANT-BASED EATING: 90 MINUTE CLASS Have you been wondering what all the talk is about eating a whole food, plant-based diet? Perhaps you’ve heard that this style of eating is the best way to protect yourself from chronic disease. And perhaps you’ve also heard that this way of eating can not only prevent but can also reverse and/or diminish many diseases such as hypertension and cardiovascular disease, type2 diabetes, auto-immune conditions, osteoarthritis, mild to moderate Alzheimer’s, and some cancers. The power of plants to nourish our bodies for optimal health is amazing and most people are not aware of why this is so. Unfortunately, doctors typically do not learn this knowledge in medical school so it is unlikely your personal doctors have shared this information with you in any comprehensive way. If you are interested in learning more about plant-based eating, this introductory class is for you. In this class, we will give you an overview of why eating plants is the best strategy for optimal health. We will share some success stories with you of people who have transitioned from eating animal-based and processed food diets to one of healthy plant foods. And we will do a cooking demo for you of a delicious plant-based recipe and let you enjoy it after it is made. After attending this introductory workshop, we invite you to attend a 6 week series on whole food, plant-based eating we will teach in Winter, 2019. Think of this introductory class has “wetting your appetite” for learning more about this style of eating. In the 6 week class, we will get into the topic much more fully so you can confidently learn the science behind whole food, plant based eating and how to successfully eat this way.
WHO IS PRESENTING THIS CLASS? The Happy Vegan Couple is comprised of Dr. Denise Rose and Georgie Campas. As a couple they have been teaching local Tucson residents about whole food, plant-based (WFPB) nutrition for several years. They have a social media presence on both Facebook and YouTube under the name Happy Vegan Couple. On YouTube, they post their whole food, plant-based cooking videos to help newcomers to the WFPB lifestyle learn how to cook delicious, healthy foods in their own kitchens. And on Facebook, the Happy Vegan Couple page is an educational resource for up-to-date knowledge on plant-based nutrition and its powerful impacts on health, planet sustainability, and sentient beings. The Happy Vegan Couple have recently published an inspiring guidebook titled, “The Happy Vegan Couple Guide to WFPB Eating” and they were speakers at the 2018 VegOut festival in Scottsdale, Arizona; they will also be featured speakers at VegOut Tucson on November 11, 2018. As a Ph.D. sociologist, Dr. Rose brings a sociological perspective to issues of food policy, public health, planet sustainability and animal welfare. Aged to Perfection / Aging Successfully - Introduction Dr. Timothy Domer Dr. Domer will speak on the signs of aging, preventative care, quality of life throughout growing older and generally what is successful aging. "The keys to aging well are education, awareness, prevention and planning." I am a physician Board Certified in Internal Medicine, Geriatrics and Palliative Medicine. I spent most of my career working on the Navajo Reservation in northern Arizona. I developed the first comprehensive geriatrics/palliative medicine program in the Indian Health Service. In addition to providing holistic and culturally-centered care for elderly patients, our focus was to identify those elders at particularly high risk. Our interdisciplinary team then provided teaching and targeted services for the patient and the family in order to improve physical, emotional and spiritual health. The overarching goal was to maintain or improve quality of life for the patient the family. Our team also provided culturally-sensitive end-of-life care both at home and in the hospital.

William Joseph is an educator and has taught classes for the last three years through the University of Arizona at Osher Life Long Learning Institute. His classes on St. Francis of Assisi and "The Art of Contemplation through the wisdom of Thomas Merton" have been very well received. Working in Colorado and New Mexico, William currently enjoys teaching in Tucson and is passionate about caring for the planet and finding new ways in which individuals can change lifestyles to improve our environment.
